Creamy Avocado Dressing

This has to be my favourite dressing of all time. I love avocados, not just because they're delicious and a great source of healthy fats, but also because of their anti-inflammatory properties. As someone with arthritis that seems to be worsening by the day, it's important to eat foods that help reduce that joint inflammation.

To anyone who remembers the macro bowl trend in the 90's, avocado dressing is not new. If you have no idea what a macro bowl is, just glance up at the photo at the top of this page. In general a macro bowl contains some kind of grain, raw and/or cooked vegetables, a protein and a healthy fat. In this case, avocado is my healthy fat of choice.

However, my version of avocado dressing has one thing you might not have in your spice cabinet, "Greek spice". "Greek spice" includes dehydrated onion, red bell pepper, sundried tomato, and garlic, along with oregano, a hint of lemon, etc. The one I use is created by Club House and it really enhances the flavour of this dressing. It's available in most grocery stores, or on Amazon.

 

When I make a fresh batch of this dressing I usually use some right away and store the rest in an airtight container in the fridge where the flavours will develop further. The dressing will last about a week, but I'm betting you'll finish it long before then.

Ingredients
  • 1 medium, ripe avocado
  • juice of 1 lime
  • 1 clove garlic (minced)
  • 1/4 cup avocado oil (or extra-virgin olive oil)
  • 1/2 tablespoon Greek spice
  • 2 teaspoons dried cilantro (or 1/4 cup fresh chopped cilantro)
  • 1 pinch salt (to taste)
  • 1 pinch ground black pepper (to taste)
Directions
  1. Place all the ingredients into a small food processor, or Bullet blender, and blend until creamy and smooth.

TIP: If you want a thinner dressing, add a little water when blending.
